Hi, I’m Diana. I’m not a nutritionist, a chef, or even a very good cook for that matter. I’m just a Chicago-area girl-next-door trying to cook up a quick meal after work, or looking for a low-key restaurant to meet-up with my friends on the weekend.
Oh, and I’ve also been a vegetarian for nearly 15 years (starting shortly after the photo below was taken), and have recently declared myself to be a “Flexi-Vegan”. I now eat about 95% vegan, with the occasional slip-up or splurge containing dairy or eggs.
I live with my wonderful husband, Mike. He’s not a vegetarian, but thankfully he’s an adventurous eater and will pretty much eat anything I cook, including all sorts of healthy concoctions and attempts at multi-cultural foods.
We are pretty adventurous both in terms of places we go and things we eat. When we aren’t traveling, we love to explore Chicago’s best hole-in-the-wall restaurants, ethnic grocery stores, all-natural emporiums and occasionally the fine dining scene. I’m also always on the look-out for easy, healthy recipes with lots of flavor.
I hope to be an approachable source for information on vegetarian recipes, restaurants, and products whether you are completely vegetarian, or simply looking to incorporate more meatless meals into your diet.
