Thank you to Vegetarian Times magazine for introducing me to a really quick and delicious dinner idea: A dressed up Baked Potato!

I love, love, love the Pesto Potatoes recipe from an old article they did on microwavable meals.  Despite the simplicity, these  are packed with flavor and are ready in about 5 minutes with ingredients I can easily keep on hand:

  • Baking Potatoes
  • Artichokes (they suggest canned, but I love Trader Joe’s Frozen Artichokes)
  • Silken Tofu
  • Prepared Pesto
  • Pine Nuts
  • and Croutons

This recipe also inspired me to start thinking of potatoes as an alternative to pasta or rice as the base for a meal.
