Week-night Dinners at my place typically revolve around either rice or pasta along with some sauce from a jar, the frozen veggie du jour, and some beans or fake meat for protein.

These Tomato-Mozzarella Polenta Packets (from Vegetarian Times – June 2010) are one of our favorite ways to break the cycle of pasta and rice.  It comes out great exactly as described in the recipe, but it also works well with improvisations.  On a recent night we subbed out the olives & fresh basil for some left-over pesto and it came out great as well. Some Roasted Red Peppers or Fresh Spinach would be good additions too.  Or substitute Feta for the Mozzarella.

One serving has just over 200 calories, so to make it a meal be sure to add some sides like a nice green salad or some sauteed veggies.

Add tomatoes, mozzarella, olives, balsamic, garlic oil, & seasoning

Wrap up tightly and bake at 400 degrees for 25-30 minutes
