Meet SouvenirFinder + Her Favorite 10-minute Meal

I’m doing something a little bit different for my post today – a story swap with a blogger friend of mine, Kristin from SouvenirFinder.com!
 
As a travel-lover myself, I am a huge fan of Kristin’s blog.  She’s written about all the corners of the globe, through her own experience as well those of contributors, telling stories inspired by the local souvenirs.  Her well-informed posts cover everything from tips for attending a live football match in London to the experience of joining the crowds in line to shop for limited-edition beauty products in Japan.
 
Like me, she has a love of international Grocery Stores so I always enjoy reading about her foodie finds.  I’ve also learned quite a lot from her blog – including the fact that Red Solo Cups are a surprisingly popular souvenir for visitors to the United States… you can be fined up to $2,500 for bringing a Kinder Egg home from Europe… and how Sweden is using Airbags to revolutionize the Bike Helmet (pictured below).

Today on Kristin’s blog, she’s sharing the story of my visit to the Finca (farm) in Minca – a teeny, tiny town in the foothills of Colombia’s Sierra Nevada mountains, and one of the highlights of my honeymoon.
 
In exchange, here on my blog, she’s sharing her favorite weeknight meal, which she says she makes once a week yet never gets tired of.  

Kristin’s Go-To Weeknight Meal

Kristin’s favorite meal is likely already a favorite of yours too – Tacos!  
 
But I never realized that with a few basic staples on hand, I could have a taco dinner on the table in just 10 minutes – even quicker than grabbing take-out,  heating up a frozen pizza, or just boiling water for pasta.  
 
And it’s a super flexible ‘recipe’ too – “I make it differently every time, depending on what I have on hand. You can make the lentils from scratch and use your own spices, or you can cheat like I do and use prepackaged supplies,” says Kristin. {Note: I’m a frequent ‘cheater’ in this regard too!}

Even better, these lentil-based tacos are true crowd-pleasers that will satisfy both vegetarians and non-vegetarians.  
 
Kristin says: “It’s incredible, my boyfriend doesn’t feel like it’s a meal unless meat is involved, but he will gobble these up no problem!”

I met Kristin through my friend Amy (pictured above), since they both live in the New York City area (true story: they met in Pilates class!).  On a recent night, Kristin had Amy over for a taco dinner and photo-shoot!

Recipe: Kristin’s 10-minute Lentil Tacos

Ingredients
 
The Basics
  • 1 large onion (Kristin prefers Spanish onions), chopped and divided
  • 1 – 2 Tablespoons of your preferred oil (Kristin uses grapeseed oil)
  • ~16oz of cooked lentils (1 package of refrigerated cooked lentils OR 1 can)
  • 1 pouch of Taco Seasoning (Kristin’s favorite is Penzey Spices’ Bold Taco Seasoning)
  • 1-2 avocados, sliced
Optional Ingredients for sautee mix:
  • 1-2 cloves of garlic, minced
  • 1 cup vegetable broth
Optional Toppings:
  • Chopped Tomatoes
  • Salsa
  • Cheese or Vegan Cheese
  • etc.
Preparation
 
In a large skillet, heat a tablespoon or two of your preferred oil and sautee half the onions (along with the optional garlic).  
 
When the onions are soft, add the lentils  (if you aren’t using already cooked ones like Kristin, you’ll have to cook them first!). 

Add taco seasoning to the skillet.  Toss the mixture with spices and cook for a few minutes. 

Add about a cup of water or vegetable broth, reduce to low and let it simmer for a few minutes (warning, do not overcook or they will be mushy!).

Toast the tacos shells according to package directions and serve with sprinkled with the extra onion and your favorite toppings.

 The Results

Mike & I made Kristin’s recipe for dinner last week and I was impressed that these are truly ready in 10 minutes.  Mine are topped with some red cabbage and salsa that I had in the fridge along with the onion, avocado, and some tomatoes.
 
I could use more quick & easy meal ideas in my life.  How about you?
