Recipe Round-up: Summer Foods

As Aparna pointed out to me, today is the Summer Solstice:  The Official First Day of Summer!

I’ve been cooking up a storm lately and in celebration of Summer, here are the Best Summer Recipes I’ve recently discovered.

All are very easy, healthy, and Vegan!

 

PPK’s Ancho Lentil Tacos (recipe)

Review: These are simply incredible and my #1 Summer discovery, both for their ease and their flavor.  I can’t wait to make these again!

Substitutions: I subbed water for the oil and used Chipotle Powder in place of the Ancho Powder.

Served With: We topped ours with Steamed Red Bell Peppers and Avocado Slices.  I also made a Jicama-Mango Salad that was great inside the tacos or on the side.

 

Happy Herbivore’s Teriyaki Chickpeas (recipe)

Review: I’ve made these several times already.  The simple Pineapple-Mango Salsa is what really makes this dish stand out.

Substitutions: None.

Served With: Brown Rice and LOTS AND LOTS of Homemade Pineapple-Mango Salsa.  I defrost frozen pineapple & mango chunks and toss in red onion, cilantro, and lime juice.  I’ve never measured yet it’s so fool proof, it comes out perfectly every time.  I like to make enough to allow for 1-2 servings of Fruit with each bowl.

 

My Favorite Vegan Tzatziki Sauce (recipe)

Review: This sauce is fantastic on Sandwiches, Salads, Chickpea & Rice Bowls, or even as a Veggie Dip!  This sauce even impressed Mike, who was initially scared to taste a tofu-based sauce.

Substitutions: Red Wine Vinegar instead of White Wine Vinegar, reduced Salt to just a pinch, and used fresh Dill.

Served With: The Lean Green Bean’s Sweet Potato Falafel (also a favorite!)

 

Oh She Glows Creamy Avocado Pasta (recipe)

Review: This dish is bursting with Basil and truly tastes like summer in a bite.  I absolutely loved the flavor! Note: The sauce was extremely silky/slippery (perhaps because I left the oil out?) so if you aren’t a fan of that texture then this dish isn’t for you.  

Substitutions: Eliminated the Oil and reduced Salt to a pinch.

Served With: Plenty of Cherry or Grape Tomatoes

 

Hummus & Tomato Toast

Review: This ‘recipe’ is really a ‘no-brainer’, but this very simple sandwich blew my taste buds away.  The flavor of Summer’s Ripe tomatoes really stands out when served like this.

Recipe: Toast two slices of Whole Wheat bread.  Spread with your favorite hummus.  Top with a sliced Roma Tomato.  Sprinkle with Salt & freshly ground Pepper.

Served With: It makes for a satisfying Snack on it’s own.  Or make it a meal by adding a fresh garden salad, a soup, or both!
